Results of the Giveaway and Mother’s Day
Hello, hello, hello! Today I’m bringing you a double whammy of a post with not one but two happy little sections: 1. The results of the giveaway and 2. What my Mother’s Day looked like, complete with a recipe.
First things first, folks: I’m excited to announce the winner for Veganland’s First Ever Giveaway!
I got 2 comments by 2 superb bloggesses on the post saying that they “entered” the drawing, so I’ve decided to forego the formalities and award them each a prize instead of randomly picking between the two! Second things second: my Mother’s Day!
The theme for the day was green! Nearly everything I put down my gullet was a gorgeous springy green color. It started off with the breakfast (not pictured, oops!) I made for Maddie of steam kale atop toast slathered with my homemade Garlic Aioli from Rawesomely Vegan. We munched then she scurried off to work, leaving me with a day to myself at our cozy little rabbit hole to cook, write, and create. As Maddie said I got to have the perfect Mother’s Day! The kids even surprised me in bed this morning with lots of purrs and kisses.
For lunch, I had a Green Goddess sandwich with local cucumber and lettuce atop rich grainy bread slathered with more homemade aioli:
What a simple and elegant sandwich! (see below for recipe!)
For snack, I had some roasted red pepper hummus and sugar snap peas:
Then later a glass of delicious green juice:
(and a banana, no photo needed)
I made Maddie a Mother’s Day dinner of sloppy joes, raw slaw from Rawesomely Vegan and a simple quinoa salad:
Served on gluten free bread with a drizzle of garlic cracked peppercorn dressing that I made the day before. Simply divine.
Dessert was on Maddie:
A cookies and cream cupcake from my kitties! (They also got me a 6 pack from a small brewery and a cactus!) The coconut milk ice cream was from me, and the sauce atop it was a chocolate mint sauce my mom made for us.
And now, as promised, the recipe for the Goddess Sandwich. It’s so simple and so delightful it’ll have you a believer for sure.
2 slices hearty grain bread
your favorite vegannaise spread (I recommend getting Rawesomely Vegan and making the aioli!)
5-7 slices cucumber
1 lettuce leaf
salt and pepper to taste
Smear the vegannaise on your bread slices, then top with cucumbers and salt and pepper. Add a lettuce leaf and feast! I ate 2 of these little sammies they were so good! Enjoy!
