Cracked Peppercorn is Hardly worn…

Recently, I posted a recipe for what I call “Creamy Dreamy Hummus Vinaigrette.” Well folks, in case you can’t tell by the above photo, I’m really in to the salad dressings these days, and here’s another! And guess what folks, if you use the right Vay-O, it’s RAW!

Light n’ Creamy Cracked Peppercorn Dressing

I’d be lying to you if I told you I sweated over this one for hours on end. It was a fast, simple, and very delicious dressing that has a delicious tang and packs a powerful punch on everything from salads to freshly cut veggies.

Here’s what you need:

1/4 cup Vay-O (I made my own)

1 Tablespoon lemon juice

1 teaspoon apple cider vinegar

1/4 teaspoon ground black pepper corns/ black pepper

 Place the above ingredients into your favorite vinagrette shaker, then shake to combine. Drizzle on everything from salads to sandwiches, as seen here on our Mother’s day sloppy Joes:

Yee-haw. And talk about delicious.

pretty fantastic inspiration. (Just a good reminder to stop and take in the little inspirations in life…) It’s definitely got a ranchy kick to it, which I got to thinking about after watching this new flick on the Netflix called Rango. Whether you’ve got kids or you’re just a kid at heart like me, this movie is adorable and tickled me with just the right kind of humor. So, if you need a laugh, want to see Johnny Depp be a talking lizard, or are a sucker for gorgeous animation like me, you should definitely check it out! I mean come on folks, there’s a mariachi band of owls that narrates the whole thing by singing. Seriously, watch this thing. It’s a great vegan flick! And, you should probably whip up some peppercorn dressing to have with your movie too…
