Salute to the Sandwich
There’s something that’s so inherently satisfying about the sandwich. Simple, elegant in its own unique way, delicious, and satisfying, the sandwich is probably one of my most favorite things to eat, especially for lunch.
The thing I love most about the sandwich (other than eating it!) is probably its versatility. You can customize and personalize with any number of fillings or toppings to make your 2 slabs of bread and whatever goes between both unique and your own. There’s also something so satisfying about picking up your food and eating it with your hands. It’s great. It kind of brings you back to childhood a little bit, to the days of lunch boxes and PB&J’s of relishing in the things you loved and turning your nose up at things you didn’t.
Back in those days, the sandwich was a simple way to satisfy and to get what you so often were denied in those early years–what you wanted. I guess that’s why sandwiches are one of my ideal comfort foods and I loving eating them as much as I love preparing them. Lately, my work schedule has allowed me some time to have luxurious days at home alone during which I read, write, craft, work on various projects and you guessed it–play in the kitchen. Since it’s just me around here at lunch time most of these days, I take the opportunity to indulge in a beautiful sandwich or two several times a week while Maddie’s off waiting tables at one of the few completely meat free joints ’round these parts.
So here are 2 sandwiches I’ve been loving these days, complete with their ingredients in hopes that they will inspire you to make your own delicious creation between 2 pieces of bread too.
The Tempehnator:
One slab marinated tempeh with sliced cucumbers from the Farmer’s Market and balsamic vinaigrette on sprouted grain bread. Side of raw chimichurri dipping sauce from our local taco truck and a nice dark local beer.
Walk Through the Garden:
Artichoke and spinach hummus, vegannaise, sliced Far Mar cukes, local green house tomatoes, sliced red bell peppers, local lettuce, drizzle balsamic dressing. Served along side some sweet tater chips and another delicious little tub of hot sauce for dipping.
