Piece a Pizza
Veggie Witch inspired me! The other day, she posted some wonderful photos of pizzas she made with her family. (Still dying to try her guac shmear…)
Remember those Little Cesar’s pizza commercials from the 1990s with the tag line “Piece a Pizza!” or maybe it was “Pizza! Pizza!” (I could never tell…) I always think of that tag line, whatever it actually is, when I’m in the mood for a delicious, hot, savory pie topped with vegan goodness.
Sunday night Maddie and I made just that–2 delicious pizzas right in our oven. We each made our own (as I’ve mentioned before, we have different ideas on what makes the perfect pizza…) and will swap slices or bites to see what the other created.
This was my pie:
My idea of the perfect pizza: vegan cheeze, mushrooms, olives, tomato sauce, garlic, basil, and a few chunks of fresh locally grown tomatoes. We usually make a cashew ricotta for pizzas, but this time around we decided to shake things up and bought a vegan soy based cheese at the co-op. It was non-GMO and quite tasty. Maddie loves it especially as she has a serious aversion to Daiya. (Who has a cheeze wedge by the way… who knew?) If we buy vegan cheeze, this is the only occasion for us to do it, and whew! Does it ever pay off! I love my cashew ricotta but this was a nice change from the flavor we’ve grown so used to! I think I’ll use the leftovers on a lasagna with zucchini noodles… hmmm…

I recently discovered daiya’s havarti wedge. SO. good. I don’t normally like the shreds but the wedge has a completely different, much more realistically “cheesey” taste. nom nom nom! we like to make grilled cheese sandwiches with it when we’re feeling like we need a delicious splurge.
