Maddie’s Mushrooms
Maddie’s restaurant has been closed all week long so she’s gotten lots of relaxing time. For her, that means time to cook! While I was at work on Monday night, she made herself this lovely dish:
Gorgeous, summery stuffed mushrooms and a side of roasted brussel sprouts (her favorite veggie!!)
When I got home for work, I was lucky enough to be able to feast on the same! She did the brussels in a simple rub of garlic and some balsamic and also put some of the dark vinegar on to each portabello to marinade them before baking.
Then she filled each mushroom cap with some cashew cream, roasted red pepper, and fresh spinach:
Then it was another layer of all the ingredients and a topper of some fresh garden basil.
Maddie really hit the culinary nail on the head with this one. The mushrooms were the perfect combination of creamy and rich, but the balsamic cut the creaminess nicely and the peppers, spinach, and basil added a nice fresh kick to the mix.
