Vegan Bahn Mi!
Whew! After this meal were we ever bursting at the seams! But it was so delicious and so worth it that I’m craving Bahn Mi all over again! Bahn Mi is a Vietnamese style sub sandwich, filled with all sorts of tasty goodies! Maddie and I recently had a failed attempt at making dumplings, (didn’t realize the wrappers had eggs in them until we got home) so we swapped the decidedly non vegan wrappers for some vegan buns and set about making our own vegan Bahn Mi!
We used whole wheat hot dog buns as we couldn’t find any hoagie rolls, and filled them up with a mixture of tofu, shiitake mushrooms, bok choy, and garlic–all topped off with some vegan kimchee, crunchy bean sprouts, and fresh cilantro.
This sandwich was crunchy, spicy, delicious and divine. We each had 2! On the side we had some rice noodles dressed with a ginger soy and spicy dressing and a little extra kimchee just to get our fix.
And get our fix we did. This was one of the most satisfying meals we’ve had in a long time!
Veganland’s Bahn Mi
buns/hoagie rolls of your choice (We used Rudi’s organics)
1 package extra firm tofu
fresh cilantro
fresh bean sprouts
1 clove garlic, minced
1/4 teaspoon freshly chopped ginger
1 Tablespoon soy sauce or tamari
handful shiitake mushrooms, chopped
1 baby bok choy, diced
2 sliced scallions
Your favorite brand of vegan kimchee
Crumble 3/4 of the block of tofu. (Save the other portion for later, or go ahead and use it if you’re cooking for a crowd or are really hungry!) Set aside. Sauté freshly minced garlic and ginger, then add scallions. After this mixture has melded for a few minutes, add the chopped mushrooms and bok choy. When the boy choy has wilted and softened, add the tofu and stir to incorporate. Season with the soy sauce and cook until lightly golden. Scoop onto a toasted bun and top with kimchee, bean sprouts, and sprigs of fresh cilantro. If it’s not spicy enough for you, add a few drops of your favorite hot sauce and devour.
** Note: For a more authentic flair, you can substitute a vicken or tobeefy for the tofu!**
