Through the Looking Glass: Clean it Up! Tasty and healthy weekend highlights
You know I love some good old-fashioned vegan style bar food, but I also love simple, clean flavors that are both elegant and unrefined. Lately, I’ve been attempting to clean up after several consecutive trips to the Remedy Diner and about a zillion delicious comforty food items that I’ve consumed in recent weeks.
While delicious, an influx of dessert (sugar!) and lots of gluteny items made me feel, well, urrggggggggg. I’ve been trying to be more mindful of gluten (or lack thereof) in the foods I eat, and only consuming it in the drinkable form (hooray beer!) while packing lots of fruits and veggies into my diet. So here’s a little look at some of the fantastic, healthy, and oh so tasty munchies I ate this weekend! Oh, and there are a few other antics thrown in there, too…
Breakfast:
Delicious, gooey bowls of oats and chia seeds, topped with a little strawberry jam (my favorite!) and some crunchy peanut butter.
Along with lots of fresh brewed and locally roasted coffee with homemade almond milk.
‘Cause we’re sleepy in the mornings…
Brunch:
Sunday brunch was delightful:
Scrambled tofu with kale, onions, garlic, and tomato served alongside some delicious seasoned roasted potatoes.
Lunch:
Gotta love some delicious sushi! Thursday afternoon, Maddie and I met at our favorite local sushi joint for some delicious vegan sushi rolls, including inari (tofu over rice) and pickled radish roll.
Who said comfort food has to clog your arteries? For us vegans, that’s almost never the case, but some of our foods are definitely healthier than others, like this little bowl of mac n’ cheese, chilli, and steamed kale that we ate on Friday:
The mac was Road’s End vegan mac and chreese, the chilli was Amy’s, and the kale was all my own.
Dinner:
Maddie worked on Friday night, so I was on my own! After a power bike ride up to campus to turn in my Eat, Pray, Love paper, I stopped off at the co-op for a couple of kombuchas and a healthy, hearty salad.
I cooked up some rice noodles and kale dressed in a simple sauce to go along with it. Perfection.
Saturday night I worked, so dinner was eaten at odd hours and comprised of various vegan snippets of the taqueria fair. (Not pictured) I often make myself a saladish thing with lots of veggies and salsa.
I mainly stuck to wine this weekend, with only a couple of beers thrown in to keep my gluten levels down. I noticed I definitely felt a lot better, and the beer I did drink felt like a bubbly indulgence. I adore beer, and I’m always on the look out for some gluten free varieties. Recently, a reader mentioned Harpoon Brewery’s Pumpkin Cider, which is one I’m excited to check out!

And what’d I wear this weekend?
On Thursday:
A retro-style dress with a v-neck underneath and my snuggly Threads For Thought Hoodie for class, work, and post-work fun. Yes, this is my first ever litre. I even bought a T shirt to commemorate the occasion…

With some simple, $3 thrift store skinny jeans and my new vegan Toms for Friday afternoon errands.

All in all, it was a very tasty weekend.

Pumpkin Cider??? FUN!
I can’t wait to try it! There isn’t any at my local co-op but I’m hoping it’ll be at Whole Foods!
