Through the Looking Glass: Gasp! A Tuesday!
When I was writing last week’s “Through the Looking Glass” post, I realized that I almost always document weekends, often Fridays which are my days off. So I decided that I should try and document some of my vegan eats and antics on a weekday for a change…
Breakfast
Breakfast was simple, and raw! I had a pluot…
A coconut cream pie LARA Bar, and a delicious red pear, and an Olive. Oh wait! I didn’t eat that…
Lunchies
A few delicious ingredients…
Prepped while I sipped some delicious homemade kombucha.
Beautiful ribbons of local swiss chard.
All stirred up with some curry powder, freshly roasted butternut squash, and some frozen veggies…
And served up alongside some brown rice and a Harvest Time pumpkin beer, which sports the best label ever. This meal was so satisfying and delicious, and Maddie just loved it.
Seriously, I’m in love with this label. And the beer! It’s fantastic and has just the right amount of pumpkiny spice. Oh and did I mention it’s local? Brewed just a hop, skip, and a jump away from us in Raleigh, NC.
Dinner
For dinner, I kept it simple. Just some rice noodles dressed in some rice vinegar, soy sauce, ginger, with a dash of hot sauce all cooked up with garlic, onion, and collards. I topped it off with some nutritional yeast and served it along a spinach salad with a little Annie’s Woodstock dressing.
And what to wear?!
On Tuesday I kept it simple and comfortable: some jorts, a Tegan and Sara t shirt,
and vegan Toms:
