Homemade Peanut Butter!

Yesterday was October 1st– the first day of Vegan MOFO! To celebrate, I made myself a little treat…

 

Fresh, homemade peanut butter!

After dinner, I still felt a little hungry and that jar of peanuts was just staring me down. So I went for one of my favorite childhood snacks:

A delicious, local apple, with my homemade nut butter!

I’ve shared my almond butter recipe on the blog before, and I love to make all sorts of funky nut butters with all sorts of delicious combinations, but this was my first stab at peanut butter! The recipe is simple (only three ingredients!) and is the tastiest peanut butter I’ve ever had!

Veganland Peanut Butter

2 cups roasted, unsalted peanuts (if you can get your paws on raw, even better!)

1 Tablespoon raw agave

1/2 teaspoon salt

In your food processor, pulse to break down the peanuts into smaller pieces. Process on high until the peanuts form a crumbly, corn-meal like consistency. Add in the agave and salt, and continue to process until the peanuts relax and form peanut butter! Scoop into a jar, and refrigerate until used, which won’t be long because it’s the most delicious peanut butter I’ve ever eaten!

  1. I rarely make my own nut butters, and that’s a real shame because they’re always so much better tasting than anything you can buy. Such a short and sweet recipe is a very convincing reminder!
