Classic Cookie
What’s better than the classic chocolate chip cookie?
My picky mate is always after the perfect cookie, and chewy gooey chocolate chip happens to be her favorite. This is a healthy spin on the old classic, and I can bet you’ll have most of the ingredients in your pantry already.
Classic Chocolate Chip Cookies
2 cups whole wheat flour
2 teaspoons baking powder
3/4 cups raw turbinado cane sugar or coconut sugar
1/2 cup dark chocolate chips
pinch cinnamon
1/4 teaspoon almond extract
1 teaspoon vanilla extract
1/2 cup coconut oil
1/4 cup nut milk
2 heaping Tablespoons applesauce
Preheat oven to 350 degrees. In a large mixing bowl, combine flour, sugar, baking powder, cinnamon, and chocolate chips. In a separate bowl, combine milk, oil, extracts, and apple sauce. Pour into a crater in the center of the dry ingredients, then stir to incorporate. Using a spoon, scoop out dough and place on a cookie sheet about 2-3 inches apart. Bake for 10-15 minutes, or until lightly golden. Don’t bake too long, or you’ll spoil the chewiness!
They’re delicious and chewy, warm, and melty right out of the oven. The perfect treat in the form of the perfect classic cookie.






I’ve always wanted to use coconut oil in cookies! I’ll have to try these out.
In these, the flavor was very light, you couldn’t even tell there was coconut oil in them!
