One of the things Maddie craves the most is good old fashioned comfort food. You know, the kind that you used to love when you were a kid? Grilled cheese, mac and cheese, corn dogs, hot dogs, all things that are inherently unvegan. Since Maddie came into my life, I completely redefined my relationship to some of these comfort based foods. I’d never tried a vegan cheeze or meat replacement until my Bear went vegan and expressed an interest in all of those foods. I’d never had an affinity for them, but once they took my diet by storm, they easily found a place in my life.
One of Maddie’s favorite things is a grilled cheeze, especially if it has my little spin on it.

Daiya cheddar style wedge

Earth Balance
Place the avocado on each slice of bread. Using a knife, smear the avocado into the bread. Lay thin slices of the Daiya across one slice of bread. Place the two slices together, and smear Earth Balance on the top slice. Flip it over, and place into a frying pan. Butter the side of the bread facing you. When you can start to smell the toasting bread, flip. Slice it diagonally and eat immediately.



Grilled cheese was always my sandwich of choice – as long as my mom made it. Hers always tasted better than anybody else’s! Maddie obviously feels the same about yours

I have avocado sandwiches and pitas all the time but I never thought of grilling them!
