Lemon Muffins
On a day home alone, I recently cooked up a beautiful batch of lemony muffins to take the bite out of the cold winter air that’s been getting me down of late. There’s something so very radiant about the taste of citrus that really kicks those blues in the buns.
Lemony Muffins
3 and 3/4 cups whole wheat flour
1/2 cup oil
zest of 1 lemon
juice of 1/2 lemon
1 cup coconut sugar
1/2 teaspoon vanilla
3/4 cup almond milk
1 teaspoon baking powder
1/2 teaspoon baking soda
In a small bowl, combine oil, lemon juice and zest, and almond milk. In a separate bowl, combine baking powder and soda, flour, and sugar. Slowly pour liquids into flour mixture. Fill your muffin wrappers about 3/4 of the way full, and bake at 350 for 20-25 minutes or until a knife comes out clean.
I had a couple of muffins for breakfast yesterday morning with a little Earth Balance and strawberry jam from a neighbor. Just one way to beat the winter blues…
