through the looking glass (mofo edition): nags head, day 1
This past weekend was nothing short of glorious. Perfect weather, beautiful beach, sweet company, and no agenda except for delicious vegan food and fulfilling connection. I’m always so in awe of the ocean. The NC Outerbanks are nothing short of breath taking–the ocean was brilliantly blue, the sand wasn’t too hot, and the water was beautifully calm the last day there. Perfection.
Going back through this weekend’s photos made me realize not only how full and rich the few days I was able to spend there were but also how MANY PHOTOS I took. I’m divvying them up into a few shorter posts rather than one long one that might just never end. So here you have it folks, Day 1:
Breakfast on the go (post coffee of course): a plucot and coconut juice while stocking up on goodies for the weekend. Then…3 hour car ride… lots of Marina and the Diamonds… windows down, hair a flyin’ in the breeze….
After tumbling out of the car, it was straight to the water to dip my toes in. The deliciousness of champagne and olives was soon unleashed.
Clockwise from the top: Olives, more olives, artichoke antipasto spread, Vegan Gourmet cream cheese, flax seed water crackers. (Can I just say how incredible it is to be able to walk into a grocery store I’ve never been to and know that I’ll find Vegan Gourmet there?!?!)
Enjoyed whilst battling the wind soon pushed us inside to feast while watching Funny Girl.
Epic and I do mean EPIC tacos with soy beef, black beans, Tofutti, vegan cheeze, guac, lettuce, tomato, garlicky salsa, the works.
Consumed with delicious, dry, luxurious champagne.
These tacos were nothing short of divine. Local soy “beef” seasoned perfectly and chopped up into taco filling perfection, with beer beans and all of the toppings. Not too much rivals that kind of deliciousness for me.
Soy “Beef” taco filling
1 Tablespoon olive oil
1Tablespoon taco seasoning
1 package soy “beef” shreds, thawed
1 small tomato, diced
Heat oil over medium heat. Add soy beef and sauté until it begins to crisp. Add taco seasoning and tomato. Dice if desired, then serve immediately.
Are there enough words in my vocabulary to describe the joy these little tacos brought me? As if anything so delightful could follow, the next day was filled with as many wonders, culinary and beyond.
